Celebrate the arrival of Spring with a Dunedin twist on a Tom Collins

Dunedin Dry Gin has a little subtle sweetness and spice making it the perfect base for an old fashioned Tom Collins. In late spring and early summer, Dunedin hillsides drip with Elderflower and many locals make their own Elderflower Syrup or Cordial. Barkers Apple and Elderflower Syrup is a great substitute if you don’t have access to homemade or if it’s still a little early for the Elderflower!

50 ml Dunedin Dry Gin

15 ml fresh squeezed lemon juice

30 ml Barkers NZ Apple & Elderflower Syrup or Homemade Elderflower cordial

125 ml Chilled Soda Water

Pop plenty of ice in a highball glass, add gin, lemon juice and syrup then top with soda, give a good stir and garnish with a slice of lemon.

Done!
