Using bakery waste

Dunedin Craft Distillers is the first distillery in Aotearoa and one of only a handful world-wide to upcycle bread and bakery waste into spirits. 

To make alcohol from scratch.

All the alcohol we produce is crafted from scratch. Currently, we can process around 200Kg of bakery surplus per batch.

90% of our mash bill comprises bread and bakery surplus. The remainder is New Zealand malted barley and oat husk. The equivalent of roughly four loaves of bread goes into every litre of finished Spirits.

We had a closed loop ice-bank custom designed.

Our still condensers are cooled using a custom designed closed-loop ice bank. This ensures high quality product and minimal water use.

We collect local ingredients

As far as possible, we obtain our botanical ingredients from local and sustainable sources.

And rainwater.

Our spirits are cut to proof with rainwater harvested from Dunedin’s iconic Mount Cargill. The water is carbon filtered and UV treated at the distillery.

We upcycle and compost waste

Solid organic waste from our mash process is collected for animal feed and other plant and paper material is either composted or used to feed our worm farm.

And use carbon neutral 700ml bottles.

Packaging is the largest single component of our business carbon footprint. We are working to address this. Our new 700ml bottles are lightweight, made from 70% recycled glass and are Climate Partner certified carbon neutral.

We are happy to take bottle returns. If we can reuse bottles we do. Otherwise, they are cleaned and made available for home brewers/distillers to collect for free.
